Deconstructed Pizza

I’m a big fan of cooking.  It’s one of the few activities that I can do for hours without getting distracted or bored or wanting to do something else.  So it’s a little surprising to me that my favorite meal takes maybe ten minutes to make.  Here’s what you do.  Preheat your oven to 375. Take a jar of tomato sauce (Choose your favorite.  Personally, I really love Ragu.  Seriously.  It’s so much more delicious than sauces that cost ten times more and have way better packaging). Dump it in an 8 x 8 casserole dish.  Grab a log of goat cheese.  Slice it into half inch coins.  Polka dot the sauce with cheese coins.  Throw some basil in there if you feel like it.  Grate a little parmesan over the whole thing.  Pop it in the oven for maybe twenty minutes or until it starts bubbling, then throw on the broiler for a few minutes until the cheese gets golden brown.  While that’s in the oven, pour some olive oil into a bowl and throw some chopped garlic and red pepper flakes into it.  If you have some person or duxelles on hand, put some of it in a bowl, two.  Slice some really crusty bread.  Take the casserole dish from the oven and arrange everything on a table or tray (I prefer a tray since this meal is best enjoyed while watching a movie).  Now take the bread and go wild- dip it in oil, dip it in sauce, spread some pesto on it, dip it in the sauce again.  Do whatever you want, follow your heart, there are no wrong answers.
