I was perusing the Bittercube
blog, looking for a good cocktail to make with my bitters, when I happened upon an intriguing recipe for a cocktail called “Green Fairy # 3”, the ingredients of which included absinthe, gin, egg white, my favorite purveyor of alcoholic froth, and green tea syrup, which I knew would be simple enough to make.
I boiled about two cups of water in a small saucepan, turned off the heat, added 5 green tea bags and let it steep for ten minutes before removing the tea bags, bringing the liquid back to a boil and adding 2 cups of sugar and stirring until it dissolved. Voila! Green tea syrup.
In addition to the cocktail below, you can mix this syrup with sparkling water to make green tea soda, use it to flavor cookies or tea cakes or mix it into a smoothie for some added antioxidant action, among other things.
Green Fairy # 3
1.75 oz gin
.75 oz green tea syrup
.75 oz lemon juice
1 egg white
1 dash citrus bitters
pour a dash of absinthe into a glass and swirl to coat the inside. combine listed ingredients with ice in a cocktail shaker and shake very well. strain into a cocktail glass.
